A Girls’ got to eat: Cool as a Beet

Hi F&F,

It was hot yesterday but, I was as cool as a cucumber beet. I spent a fun day with my very cool friend Gay. We slowly strolled through the High Line and had a tasty lunch at the Ronneybrook Milk Bar at Chelsea Market. I had a refreshing salad of yellow beets, fennel, and goat cheese.  It was garnished with garlic toast rounds and a splash of light pesto. Gay and I shared a side order of mac and cheese. The mac and cheese was not exactly summer fare but, I am always on the hunt for “smack your mama good” mac and cheese.  This rendition of the ubiquitous comfort food was good but, not parental abuse worthy.

    Nothing like some “smack yo mama good” mac and cheese! LOL. That beet salad looks delish. You know I love me some beets…..

    Oh, that sounds fabulous; good friends, good food, good weather — an adventure! So tell me, are yellow beets really as delicious as the traditional red ones? There are definite trade offs to be considered with tomatoes.

    The summer begins!
